NGAN NƯỚNG is grilled muscovy duck. Muscovy duck (NGAN) meat has a distinct dark red color and carries a lot less fat, setting it apart visually from other duck varieties. Goose meat is cut into small pieces, marinated with five spices and then grilled over charcoal. The dish is served like BÚN CHẢ HÀ NỘI with one plate of grilled muscovy duck accompanied by one plate full of vegetables, a dipping sauce and one plate of vermicelli.
